Welcome to 1907, where sight, sound and taste are all equal ingredients in our mission to create a truly memorable dining experience for each and every guest.
Leading designer Gabbi McAullay traveled the world to source artisan tradesmen and suppliers. From hand-made chandeliers, luxurious chairs and booths, mosaic bathrooms, renowned American photographer Murray Garrett’s beautiful photographs adorning the walls coupled with our Italian horse to greet you on arrival, Gabbi has transformed a run down historic ‘rag trade’ building into a truly stunning dining room that rivals any in New York, Milan or Paris.
Our food philosophy is simple: Produce, Produce, Produce. We create partnerships with the leading producers to source only the very best and freshest produce available. These suppliers are the true food heroes who work tirelessly to raise the standards of food production that have suffered so badly over the past thirty years. We salute you!
That said, it is our dedicated team of award winning chefs, headed by executive chef, Nick French and Sous Chef Casey Wynaden, that allow this produce to be displayed at its best. With ALL food made from scratch on-site you will receive the best produce, cooked with both expert skill and love. In an era of the absent celebrity chef I can assure you that both Nick and Casey will be cooking for you whenever you dine with us.
Our front of house, superbly managed by Melissa Van Der Heide, employs only full time professionals who share a passion for food, wine and service.
Although in a short time 1907 has been nominated for numerous awards and received many fine reviews we are committed to continued improvement. On this front each year every 1907 chef along with the venue manager will be sent to a different overseas destination to gain work experience in the worlds leading restaurants. I hope this investment, along with the purchase of farms in both Toodyay and the Swan Valley where we intend to farm rare breeds and organic produce for use in 1907 demonstrates our long term commitment of creating a truly memorable dining experience.
