Sight & Site
Leading designer, Gabbi McAullay, travelled the world to source artisan tradesmen and suppliers to transform this 100 year old rag trade factory into a truly stunning dining room that rivals any in New York, Milan or Paris. From hand-made chandeliers, to luxurious chairs and booths, mosaic bathrooms, renowned American photographer Murray Garrett’s beautiful black and white photographs adorning the walls, coupled with our Italian horse to greet you on arrival. 1907 has maintained its old charms, yet has incorporated a cutting edge contemporary twist, offering each and every guest a world-class experience.
Taste
Our food philosophy is simple: Produce, Produce, Produce. We create partnerships with the leading producers to source only the very best and freshest produce available. These suppliers are the true food heroes who work tirelessly to raise the standards of food production that have suffered so badly over the past thirty years. We salute you! That said, it is our dedicated team of award winning chefs, headed by Executive Chef, Nick French and Sous Chef, Casey Wynaden that allow this produce to be displayed at its best, providing you with an unforgettable dining experience. Their dedication and passion definitely shines through. It is their belief that no detail or element can be less important than another, underlying this there are some important notes about their approach to food; all food is made from scratch on-site, so guests are guaranteed to receive the finest produce, cooked with both expert skill and love. We have recently purchased farms in both Toodyay and the Swan Valley, where we intend to farm rare breeds and organic produce for use in 1907. This investment demonstrates our long-term commitment to bringing ecologically sustainable and quality ingredients to the table.

1907 Evolution
Although in a short time 1907 has been nominated for numerous awards and received many fine reviews, we are committed to continued improvement, ensuring you are receiving a world-class experience. On this front, each year every 1907 Chef along with the Venue Manager will be sent to a different overseas destination to gain work experience in the worlds leading restaurants.
